I am slowly but excitedly picking at my sim build! I am almost done the EFIS and want to test it before installing it. I've purchase this https://www.amazon.ca/gp/product/B0896XTJ14/ref=ppx_yo_dt_b_asin_title_o05_s00?ie=UTF8&psc=1 to handle the 12V (hope it is the right item). my questions are:
is the above the correct part?
can someone please recommend what to purchase for the "volt and amp display"
how do I install the fuse?

As for #1, I checked that link and it shows a 24V power supply so if you intended to get a 12V system then you need to return it and buy the correct one. You might want to consider this one if you did buy the wrong voltage:

As for #2 I would think that any good quality multimeter will work. If you are talking about a permanent display then automotive would have a variety, at least for 12V, might work for 24V as well. There are also Battery Monitors that can show boty in a digital format if you want a continuous display.
As for #3, not sure what you mean. If you are talking about a fuse to protect what you are powering then it would be inline with the + lead from the power supply to that component.
