I'm new to the forum and definitely excited to get started with my 737 sim build! I have been eyeballing the 737diysim site for over a year now and love all of the information provided, so I guess I'm officially hooked.
I came across the Sismo Solutions website a while back and noticed that they use ethernet connectivity for their modules instead of USB. What I gathered is that ethernet is faster and doesn't have the latency issues that USB is known for (i.e. the delay after turning a knob before seeing the numbers change on the 7-segment displays). If I'm wrong on this, please feel free to correct me (i have a basic understanding of microcontrollers but not much practical experience).
The main issue with their SimCard boards is that they are super expensive! Has anyone found a cheaper way to get similar connectivity with arduino...etc?

I'm using Arduino's with Mobiflight. Currently up to 11 boards now on USB connection. I have eight 7-segment displays but I limit daisy-chaining to 2 segment boards. I have no issues at all with latency on any 7-segments, switches or LED's. For me, Mobiflight and Arduino 2560 Mega's are the way to go.
