I like to use 24AWG for the Arduino connections. I especially like using the recycled aircraft cable I have as its much better than anything i have found commercially on eBay. More details can be found here:
For me, I used 24awg solid copper but have also used 26awg. For my Overhead panel, I purchased all the panels from Opencockpits and then wired everything to a Flightdeck Solutions board using 26awg. Haven't experienced any issues.
